One of the best things my family enjoys during the fall, is the festivals we attend. In each festival everyone has their own version of Apple Cider Donuts. It’s always a fun and warm feeling to be able to go out and grab a warm donut as you walk around and pick pumpkins, or maybe take a hayride. I wanted to bring home this warm and delicious tradition to my home, and put a spin on it to make it less fattening (without losing that yummy flavor donuts always have).
I’m not going to pick between the season and have them get jealous of one another but lets just say I am evenly in love with all of them. All of them though have their own amazing traditions are perks that the other one does not have. Something fall has is it’s crisp weather which puts steam at the top of my coffee cup. AHHHH Heaven right there I’m telling you lol. I hope you enjoy this recipe and share it with your family as I have with mine.
- 2 cups all-purpose flour
- 1 cup white sugar
- 2 teaspoons baking powder
- ½ tsp pumpkin spice
- 1 teaspoon salt
- ½ cup apple cider
- 2 eggs, beaten
- 1 teaspoon vanilla extract
- 1 tablespoon butter, melted
- 1 Tbs Agave
- Frosting:
- 2 Tb of Apple Cider
- 1½ Cup of Powdered Sugar
- 1 Tsp of Cinnamon
- 1 Cup of Pumpkin Spice Pecans (or regular Pecans)
- In a small pot, melt butter. Stir in cider, and set aside to cool.
- Then whisk together flour, baking powder, sea salt,and pumpkin pie spice in a medium bowl. Set aside.
- Into the cooled butter mixture, whisk in sugar, honey, and egg until evenly combined.
- Stir together wet and dry ingredients until just combined. Over-mixing will create a tough donut.
- Spray the donut pan. Then Add batter to a piping bag and pipe evenly into the pan.
- Bake for 14 minutes. Allow to cool 1 minute before removing donuts onto a cooling rack.
- Meanwhile, make the frosting. Melt butter and stir in cider. In a flat-bottomed bowl, mix together cinnamon and powdered sugar*.
- Quickly dip each donut in butter mixture then sprinkle on the pecans. Place back on cooling rack. Best served same day, slightly warmed. If storing leftovers, lightly cover and store.
