If you’re in the mood for a one pot meal with some delicious Asian flare, this is the meal for you tonight. I’m a huge fan of one pot meals that not only cut down time in preparation but in total cooking time. I like to call them dump meals like my Chicken Florentine because everything gets dumped into one pot and you set the timer and walk away. I like to set the table for the kids to eat, or just sit down and sip my coffee (yes I drink coffee at 6 pm who doesn’t?).

I like to use Fresh Shrimp with the shells, I was raised on having to peel my shrimp so it’s part of the fun with eating this meal for my family. I highly recommend you use shrimps with shells still on but if you want to deshell and devein your shrimp that’s totally fine as well. This is a perfect dish to use Frozen Shrimps as well. They are perfectly steamed with this recipe and are amazingly delicious.

Pressure Cooker Shrimp Pad Thai
 
Ingredients
  • 1 Package of 14 ox Stir Fry Rice Noodles OR Spaghetti Noodles
  • OPTIONAL 2 Thai Chili Peppers (or 1 Jalapeno)
  • 1 Green Onion
  • 6 Minced Garlic Cloves
  • 1 Lime Juiced
  • ½ Cup Packed Light Brown Sugar
  • ⅓ Cup of Soy Sauce
  • ⅓ Fish Sauce
  • 3 Cups of Chicken Stock
  • 3 Cups of Water
  • 2-3 lb of Frozen or Raw Shrimp (With or Without the shells)
  • 4 Eggs
  • 1 Tablespoon of Oil
  • Lime Wedges
  • Fried Onion Strings
  • Optional:
  • Bean Sprouts
  • Shredded Carrots
  • Diced Radish
  • Minced Onions
  • Crushed Peanuts
Instructions
  1. Turn the Pot on Saute Mode or press the Chicken/Meat Button.
  2. Scramble the 4 eggs and set aside. Once pot is hot Add 1 tablespoon of oil and then add the eggs. Cook and then remove from pot.
  3. Add 2 Tablespoons of Oil. Saute the garlic, green onions, thai chili peppers and stir. Add the brown sugar and mix well. Add the lime juice, soy sauce,chicken stock and water and mix well.
  4. Add the Stir Fry Rice Noodles and then add the shrimp to the top of the noodles.
  5. Cook on low Manual LOW 12 minutes.
  6. Quick Release and then gently stir noodles check to see if noodles are cooked. If any of the noodles are still uncooked push them to the bottom of the pot where the sauce is still hot. Add 1 Cup of water or chicken stock to help speed the process along.
  7. Add more Fish Sauce, Soy Sauce or Brown Sugar if needed.
  8. Add in the cooked eggs from earlier and any other optional vegetables listed above.
  9. Plate and Serve with lime wedges and onion crushed onion strings OR Crushed Peanuts
  10. Enjoy!
