If you are ever in need of something light and tasty, try these Banana Blueberry Baked Donuts. There is no yeast used in this recipe so you are free to indulge in how many ever you want. I personally drew the line at 1, okay okay 2, okay honest 3 but that I split with my 2 year old! Yep that’s my story and I’m sticking to it. The most fun thing about these baked donuts is your kids can help you make them.
This recipe came about when I looked in my fridge and noticed I had a pint of blueberries which had been barely touched. That’s not normal in my house as my kids LOVE blueberries. Noticing these and some bananas that were going ripe, I had the delightful idea to make donuts out of these. This would be a fun way to put the NEW donut pans I just purchased at Michaels not 2 weeks before, to good use.
My goal to make a donut that wasn’t chalk full of yeast was set and then I began my recipe for this baked version. Taking my plain glazed donut recipe to another level, I just added in bananas and blueberries. Making this recipe is not only yummy, but its also a way to put your unwanted fruit to good use. I mean whenever we can make sure our hard earned money in groceries doesn’t go down the drain/trash, is a win win in my book.
