The summer is just about done and that means back to school shopping has commenced in homes across the US. As delighted as I am to see the kids go back to school, it always hits me like a huge wave realizing the kids are yet again another year older. I don’t want to speculate that this in return makes me a year older because we all know mom is a beautiful 27-year-old (for the 2nd time) with perfect hair.
Nonetheless, the kids have moved up another grade and now I have to somehow accept that my babies are that much closer to college. A fun tradition that the kids and I like to do the day before school starts is making some delicious homemade pop tarts that they can take with them to school in the morning. It is a huge help in the morning time when things are hectic and everyone has butterflies in their stomachs.
I love that the kids can bring a piece of home with them to their first day of school. Keturah said that when she pulled out her homemade pop tart for snack time, it helped break the ice with a new friend in class. We also saved her name bracelet that we made last year to wear again this year. Name bracelets are awesome as well for the first week of school, it helps new friends remember your name easier.
This year is actually our busiest activities school year where all of the kids will be involved in some fun sports. This year Keturah will be in dance, Esuun will be in gymnastics, and the boys will be playing Basketball. I’m sure I sound crazy at this moment and I’m sure all of you are feeling for me when I say “I hope I survive this fall” keeping up with their schedules. I’m excited to see them join their new sports teams and get out there and “Think Biggerer” about what they are capable of. Speaking of how the kids Think Biggerer, let’s talk about how we were able to take one of the kids favorite morning time cereals and turn them into portable delicious meals.
I’m sure you’re wondering what is inside of those delicious looking Homemade Honeycomb Cereal Pop Tarts, and how easy is it to make them. They are insanely easy to make and if you are in a rush buying pre-made pie crust will save you a huge amount of time preparing this yummy breakfast treat. For the first pop tart, I used apple butter and topped it with a simple vanilla glaze and honeycomb cereal.
The Honeycomb Cereal really brings out the apple butter and ties the whole flavor together. The second pop tart is a smores pop tart with chocolate filling, a vanilla glaze as well as chocolate chips, marshmallows and of course delicious Honeycomb Cereal.
This sweet pop tart will surely satisfy your sweet tooth and also make a great dessert treat. These Homemade Honeycomb Cereal Pop Tarts are so easy to make, the kids can’t help but get excited when we make them. Esuun is still little so she is on decorating duty for the moment and actually loves being able to decorate her brothers and sisters pop tarts.

Homemade Honeycomb Cereal Pop Tarts
- 2 Rolls of Premade Pie Crust (or make your own dough from scratch, will yield much more dough for use if made from scratch)
- Post Honeycomb Cereal
- Apple Butter Jam
- Chocolate Spread
- Chocolate chips
- 1 Egg
- 4 Tablespoons of Confectionate Sugar
- 1-2 Tablespoon's of Milk
- 1 Tsp. of Vanilla Extract
- Heat Oven To 350 Degrees.
- Roll out the dough and cut into Smooth Half Rectangles about 3×5 inches big. Beat egg and then brush over the sides of the rectangles.
- Drop 1-2 Tablespoons of the apple butter or chocolate filling into 1 half of the rectangles. Put the other half of the rectangle over top of that first one and press lighting on the sides.
- Using a fork lighting press down to help seal the rectangles together. Then lightly poke 6 holes in the middle of the rectangles (as shown in the photos below).
- Brush the egg over top of the finished pop tarts and then stick them in the oven for 12-15 minutes, or until they are nicely golden brown.
- While the pop tarts are cooking in the oven start working on the vanilla glaze. In a small mixing bowl mix together the
cofractionatesugar, milk and vanilla extract and set aside.
- Once the pop tarts are golden brown remove them from the oven and set on the counter to cool till they are just warm to the touch.
- Apply 1-2 spoon fulls of the vanilla glaze on top and then start to add the most delicious part of the recipe.
- Sprinkle on Post Honeycomb Cereal on top of the apple butter pop tarts, as well as the
smores. Add on as much chocolate chips and marshmallows to the smoresas you please.
- Let cool completely and then store in zip lock bags for the kids to grab and go in the morning.
