Did you know that January is National Soup Month? Well, you will be surprised to find out that soup is one of my families favorite dinner dishes. Serve your family some delicious soup with my Side Salad with Avocado Vinaigrette Dressing for your next dinner. Most of the dinners in my home are thrown together at a moments notice with ingredients on hand. Other dinners are strategically planned out a week in advance. For the days when dinner can’t be planned out, I like to pick up products I know and trust will make my family happy at dinner time.
In the state of Virginia, we have had a long winter and I feel as though it might have just started. Once we think it’s going to get warm mother nature throws us a curve ball and we are stuck shoveling snow again. Since I knew ahead of time we would be facing some snowed in or in our case iced in weekdays. Whenever I am visiting the store I like to pick up these Idahoan® Steakhouse® Soups.
They are super easy to make and in just 5 minutes you have restaurant quality soup for the whole family. Idahoan® Steakhouse® Soups are available in four delicious varieties: Loaded Potato, Creamy Potato, Cheddar Broccoli and Cheddar Potato. My families favorite at the moment is the loaded potato soup, which we had for dinner the other night. I’m a firm believer in having that star side dish to any soup that I cook in my home. To balance out the deliciousness of the Loaded Potato Soup I made a simple and easy side salad that screams delicious.
I like to bake my bacon ahead of time in the oven and store the bacon bits in the fridge throughout the week. Seriously though you never know when you will need bacon bits in this house. I personally love how simple and easy it is to make the avocado vinaigrette dressing. All the ingredients can be thrown into a blender and then poured onto your salad a minute later. If you are looking for some good fats in your meal then this is the dressing for you.
Avocado Vinagrette Dressing
- 1/2 Cup of Olive Oil
- 1 Ripe Avocado
- Salt and Pepper to Taste
- 1 Tablespoon of White Wine
- 1/2 Juiced Lime
- 2 Tablespoons of Cilantro
- In a blender add the ripe avocado, olive oil, salt and pepper, white wine, lime juice, and cilantro.
- Blend to a puree and keep covered tightly in the fridge.
