Turkey Pesto Grilled Cheese

The secret to an amazing sandwich is sourdough bread. I know, I know, your probably thinking “why is that so important?”. I don’t have a professional chef response for that, but from a foodie standpoint, the bread just tastes so amazing when you add butter and make it oh so crispy.
Pair this delicious bistro-inspired sandwich with your favorite dipping soup. I personally love a good tomato or tomato bisque soup. I sometimes take a moment to think about who came up with this infamous sandwich and soup pairing. Then and think “wow they were a genius!”. I really love how the flavors all come together with this recipe and hope you give it a try.

- American Cheese
- Sliced Turkey Herb
- Sourdough Bread
- In a cast iron skillet, or regular cooking pan, melt 1-2 Tablespoons of butter on low/medium heat.
- First layer on the sourdough bread slices, then add the cheese, sliced turkey, spinach, roasted red peppers and artichokes.
- On the top slices of bread spread a generous amount of pesto sauce over the slices of bread. Top off the sandwiches and then secure them by sticking a toothpick on each side of the sandwiches.
- Flip slowly and place sandwiches softly on their other sides. Cook until golden brown, then serve with a hot bowl of Tomato Soup.
- Dip and then eat. Enjoy!
