Step 1

In a medium bowl, combine flour, baking powder, salt and whisk until well combined, set aside.

Step 2

In a stand mixer, beat together the butter and sugar on medium speed.

Step 3

Beat in the eggs one at a time. *DO NOT RUSH*

Step 4

Add in vanilla extract and half of the dry mixture at low speed.

Step 5

Pour in the coconut milk and beat until combined, then add the remaining dry ingredients and mix.

Step 6

Using a spatula, gently fold in desiccated coconut.

Step 7

Scoop out the batter into the cupcake pan, or muffin tins and fill about 3/4 full.

Step 8

Bake for 20-25 minutes or until the center is cooked.

Step 9

Top with Cream Cheese Frosting!
