Mardi Gras King Cake


Celebrate Mardi Gras with this homemade Mardi Gras King Cake!  A fun twist on the traditional King Cake, it's filled with a homemade strawberry filling. Bake and share this easy Strawberry Filled King Cake with your family.

Mardi Gras King Cake Ingredients

Step 1

Combine milk and yeast in a stand mixer, let sit for a few minutes. With the dough hook attached and the mixer at a low speed,

Gradually add in butter, flour, sugar, and salt. Raise speed and add in eggs, one at a time. Continue mixing until a sticky dough forms.

Step 3

Take the dough out and drop onto a floured surface, knead, and then return to the mixing bowl. Cover with plastic and set in a warm spot for 1 hour. The dough will almost double in size.

While the dough is rising, make your strawberry filling. Roughly chop 1 1/2 cups of strawberries, then cook on medium heat with 1 tbs sugar, stirring frequently,

Once the jam has your desired texture, remove it from the heat into a small heat-safe bowl, and set it aside to cool on the counter.

Roll out dough into a large rectangle, then spread on a thick layer strawberry mixture with a spatula, leaving 2 inches on each edge free.

Gently roll dough, making sure not to squeeze strawberries out as you go. Now you will need your bundt pan to transfer the dough into.

Fold into a circle, and drop in a bundt pan with the seam side up. Take the bundt pan to the oven and bake as directed on the recipe card.

Once the cake is fully cooked, transfer it to a wire rack to cool. While the cake is cooling, move on to making the homemade icing for the king cake.

Make the icing by combining powdered sugar, milk, and vanilla. Whisk thoroughly until smooth. When the cake is cooled, drizzle icing along the top, and follow with Mardi Gras color sprinkles.
