Banana Butterscotch Muffins

Ingredients

  • Muffins
  • 1/3 cup firmly packed brown sugar
  • 1/4 cup of Unsalted Butter softened*
  • 2 medium 1 cup ripe bananas, mashed
  • 1 Egg
  • 1/2 teaspoon vanilla
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1 Cup of Semi Sweet Chocolate Chips
  • Streusel
  • 1/2 cup all-purpose flour
  • 1/2 cup firmly packed brown sugar
  • 1/4 cup of Unsalted Butter softened*
  • 1/2 cup butterscotch chips

Instructions

  1. Heat oven to 350°F. Place paper baking cups into 12 muffin pan cups; set aside.
  2. Combine 1/3 cup brown sugar and 1/4 cup butter in bowl. Beat at medium speed, until creamy. Add bananas, egg and vanilla; continue beating until well mixed.
  3. Place 1 cup flour, baking soda, cinnamon and salt into another bowl. Stir flour mixture into banana mixture just until moistened. Spoon batter evenly into prepared muffin cups.
  4. Combine all streusel ingredients except butterscotch chips in bowl; mix well. Stir in butterscotch chips with sppon. Spoon evenly over top of muffins.
  5. Bake 18-25 minutes or until light golden brown. Let stand 5 minutes; remove muffins from pan to cooling rack.
