There’s nothing like saying ” Good Morning” with a fresh baked muffin. You would be surprised at how many this recipe makes, and how many smiles you can create. If you are like me and get uneccassarily excited to find butterscotch baking chips in the store, then you will be super excited to try this recipe out. For some reason, the banana goes perfectly with butterscotch!
To add some pizazz to these muffins, I topped them off with a butterscotch crumble topping. Yep you read that right, there is butterscotch baking chips inside of the muffin, as well as all over the tops of them. I wont lie to you, my mouth is watering as I describe this muffin to you again, and the pictures don’t help with my need to feed my greed. Yeah I tried to rhyme sorry, I pretty much failed at that, I’ll just stick to blogging and cooking.
I highly recommend that you serve these babies fresh out of the oven, or straight from the microwave. If you heat them in the microwave you can try them at 20 seconds. For my microwave that make the butterscotch melt and made the muffin oh so deliciously warm and mouth watering good. Ok now that yall know the rundown on this recipe I’ma go enjoy the rest of my muffins.
- Muffins
- ⅓ cup firmly packed brown sugar
- ¼ cup of Unsalted Butter, softened*
- 2 medium (1 cup) ripe bananas, mashed
- 1 Egg
- ½ teaspoon vanilla
- 1 cup all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon ground cinnamon
- ⅛ teaspoon salt
- 1 Cup of Semi Sweet Chocolate Chips
- Streusel
- ½ cup all-purpose flour
- ½ cup firmly packed brown sugar
- ¼ cup of Unsalted Butter, softened*
- ½ cup butterscotch chips
- Heat oven to 350°F. Place paper baking cups into 12 muffin pan cups; set aside.
- Combine ⅓ cup brown sugar and ¼ cup butter in bowl. Beat at medium speed, until creamy. Add bananas, egg and vanilla; continue beating until well mixed.
- Place 1 cup flour, baking soda, cinnamon and salt into another bowl. Stir flour mixture into banana mixture just until moistened. Spoon batter evenly into prepared muffin cups.
- Combine all streusel ingredients except butterscotch chips in bowl; mix well. Stir in butterscotch chips with sppon. Spoon evenly over top of muffins.
- Bake 18-25 minutes or until light golden brown. Let stand 5 minutes; remove muffins from pan to cooling rack.
