The age old time Delima that many of us mom’s and families deal with is the extreme amount of leftovers we receive after Thanksgiving Dinner has ended. For a mom like me, I am more than happy to eat all of the green bean casserole leftovers by myself. With the other classic dishes it can be hard to ask my kiddos to help finish them, so through the years I have found ways to mix up the leftovers to make them new and delicious again in other recipes.

The one thing that seems to never have an ultimate ending when it comes to leftovers in my home, is always the beloved turkey. After a while, the kids aren’t too happy with eating plain jane turkey sandwiches anymore, or even my favorite stir fried turkey meat over jasmine rice. I know shocking right?! Well, some inspiration happened and I came across this delicious recipe for a piandina.

If you have never had a piadina before it’s basically a dressed up pizza that you have to dip into marinara sauce. Which in turn gives you the ability to control how much sauce you want to have with your slices. Other possible sauce pairings are alfredo, pesto, garlic olive oil, and so many other options.

This super easy recipe is customizable and works with any type of diet. The pizza dough can be switched to wheat or gluten free, the vegetables can be interchanged and the cheeses can be subbed for lactose-free. With so many options for this recipe, it’s hard to not get excited to make it your own. I used my favorite ingredients in this one, which I found my kids would enjoy. I get a delicious meal and they get all of their needed veggies it’s a win, win in my book.

Let’s face it, cooking a turkey is not always the most exciting thing to cook on thanksgiving day. This mom over here loves to have things time friendly, as well as labor friendly. With 4 kids running around the house, as well as family members piling in through our front door, I like to have a Turkey that is as easy as possible to cook yet will feed my huge army. I found these amazing JEENIE-O® Oven Ready Whole Turkey’s, that you can literally buy from the store and then pop in the oven when you get home. The turkeys can come preseasoned like my Cajun Turkey, or they can be traditional.

It comes out so deliciously perfect with a fall off the bone type of meat, my kids love how easy it is to cook this turkey. I think their favorite part of it is the fact that the meat falls off the bone, making it easy for them to snag their favorite parts of the turkey. My boys love the skin while the girls and I love to snag all of the leg and thigh meat. I really hope you enjoy this recipe and are able to snag a JEENIE-O® Turkey in a Bag in your nearest grocery store.

Turkey Piadina
 
Ingredients
  • Basil Pizza Dough (or regular Pizza Dough)
  • Pulled JEENIE-O® Turkey Breast
  • Sun Dried Tomatoes
  • Shredded Mozzarella ad Parmesan Cheese
  • Baby Spinach
  • Olive Oil
Instructions
  1. Roll out the pizza dough on a floured surface, roll out until the dough is an even thin circle.
  2. Heat up a cast iron pan with a thin layer of olive oil, once oil is heated cook pizza dough on low/medium heat until both sides are golden brown and cooked thoroughly.
  3. On a cutting board add your leftover cut JEENIE-O® Turkey Breast to on of the half sides of the cooked pizza dough. Add the sundried tomatoes, layer on cheeses and then baby spinach then close using the other side.
  4. Put back in the iron skillet and cook on both sides until the cheese is thoroughly melted.
  5. Cut into three portions and serve with marinara sauce.
  6. Serve and Enjoy!

    This looks like a great way to use up leftover turkey. I think this recipe would be great to serve in our family and each person could customize there piadina.

    Oh this looks so good! I love turkey sandwiches and this is a great and new option to make. This would be great to have for a lunch or dinner.

    I didn’t know what a piadina was before I read your post. It sounds delicious, especially that you dip it in marinara sauce when you eat it. So yummy!
