A quick and easy Blueberry Oat Breakfast Bars recipe that your kids will go crazy for. A wonderful on-the-go breakfast option that’s packed with fresh blueberries, organic rolls oats, baked, and then drizzled with a tangy yogurt glaze.

Fresh and healthy was my motivation for this recipe. My kid’s grandmother loves this oatmeal brand and has been known to eat this raw as a healthy snack. Taking ahold of her idea I decided to add some blueberries and some delicious yogurt topping to round off this healthy treat.

I am always looking for on the go recipes since most days I and the kids are flying out of the door. This recipe can be made the night before and then refrigerated. Pull them out in the morning and cut to whichever size your family likes, then serve with a glass of orange juice or milk.

Take it on the go by cutting and storing it in plastic wrap the night before. Just pop them into the fridge to set overnight and then grab and go with your coffee tumbler.

Easy Blueberry Oat Bars

I also love how this recipe can be used when you have fruit that is about to go bad. Right before it’s past its last breath throw them in this and serve them for breakfast.

I have been known to do this with strawberries, bananas, and blueberries. It’s such a great fruit recycle recipe when you seem to have bought too much fruit, or maybe the kids didn’t attack it like they normally do.

Blueberry Oat Breakfast Bars Ingredients

  • rolled oats
  • margarine
  • agave
  • peanut butter
  • fresh blueberries

This simple Blueberry Oat Bars recipe only uses a few ingredients that you can find in your local grocery store. Please feel free to sub out the agave for another sugar alternative that meets your families needs.

How To Make Blueberry Oat Breakfast Bars

Preheat oven to 350 degrees. In a 10×10 or 12×12 baking pan line it with parchment paper OR spray with non-stick cooking spray. In a saucepan combine peanut butter, margarine, and agave then mix in rolled oats.

Pour in 3/4 the oat mixture in the baking pan, spread to coat the entire bottom of the pan. Now add the blueberries and then cover it with the remaining oat’s. Spread it out evenly using a spatula or wooden spoon.

Bake the blurberry oat bars in the oven as directed on the recipe card or until the ends brown. Remove it from the over and let it sit and cool on the counter. While the blueberry oat breakfast bars are cooling on the counter, we will move on to making the delicous yogurt drizzle.

Cut into squares or rectangles, serve immediately or individually wrap and refrigerate them for up to 3 days. Or freeze them for future use.

Yogurt Drizzle

  • Yogurt Drizzle Topping:
  • 1/2 Cup of vanilla coconut yogurt
  • 3 tsp orange juice

In a small mixing bowl or a measuring cup, combine your vanilla coconut yogurt and orange juice. Mix until fully combined and then pop it in the refrigerator until the oat bars have completely cooled. Once the blueberry oat bars have fully cooled, drizzle this tangy yogurt sauce all over the top of it. Cut them into desired sizes of squares and enjoy!

Ingredients

Oat Bars

  • 4 tbsp margarine
  • 3 tbsp agave
  • 3 tbsp peanut butter
  • 2.5 cups rolled oats
  • 1 cup blueberries

Yogurt Drizzle Topping:

  • 1/2 Cup of vanilla coconut yogurt
  • 3 tsp orange juice

Instructions

  1. Preheat oven to 340 degrees.
  2. In a 10x10 or 12x12 baking pan line it with parchment paper OR spray with non-stick cooking spray.
  3. In a sauce pan combine peanut butter, margarine, and agave.
  4. Mix in rolled oats.
  5. Pour in 3/4 the oat mixture in the baking pan, spread to coat the entire bottom of the pan.
  6. Pour over the top of the oat mixture the blueberries. Spread out evenly.
  7. Top with the remaining mixture of the oats and then bake in the oven for 20 minutes, or until the ends brown.
  8. Let sit and cool on the counter, in a mixing bowl combine your vanilla coconut yogurt and orange juice, refrigerate until the oat bars have completely cooled. Top the bars with this sauce as much as you would like or as litter.
  9. Cut into squares or rectangles, serve immediately or individually wrap and refrigerate them for up to 3 days. Or freeze them for future use.

This is a nice and easy recipe to make at home for both kids and adults. It's sometimes better to make these kind at home than buy from grocery as its cheaper and could be larger quantity. :)
