Cinnamon Coffee Cake with Salted Caramel

As a child, my fondest memories of my aunt Karen, have always been her humorous jokes with a cup of coffee in her hand. When I was little, I never understood why she loved coffee so much and wondered if it was attributed to her outrageous humor. Now that I am an adult, I realized it was because it was a liquid super power!

I turn into Super Mom whenever I have my daily dose of coffee, I'm able to tackle once tremendous feats in short but elaborate bursts of energy. Five loads of laundry? No Problem! Science Project? Pass me the baking soda! I'm honestly truly not the same person if I don't have my morning cup.

When I do have my morning cup I'm just a little bit nicer than normal but shhh....that's part of the superpower *insert wink*. Popeye has his spinach, and I have my coffee, the world makes sense to me now.

Cinnamon Coffee Cake

Coffee has become a passion of mine that I take very seriously, yes I know my coffee well. As a former Barista, I used to study food pairings with specific coffee beans. Can you imagine being paid to try new coffee combinations with delicious fresh-baked pastries?

The one constant in my coffee love affair has always been my love for the International Delight coffee creamers. I have tried almost every flavor, including the seasonal ones.

I love to play around with the creamers and put them in my favorite recipes to create an even better coffee pairing pastry. One I recently have come up with is my deliciously moist Cinnamon Coffee Cake with Salted Caramel.

My Favorite Coffee Creamer

When I search for the best flavor and quality in coffee creamer, as I said above I always go to the International Delight Coffee Creamers. Recently I found a new line they are featuring with Simply Pure Ingredients using real milk, cream, and sugar.

Raisin Crumble Topping Ingredients

  • light brown sugar
  • granulated sugar
  • ground cinnamon
  • salt
  • unsalted butter, melted
  • all-purpose flour
  • Raisins

This is a 3 layer process that starts with us making the crumb topping. This recipe is definitely a commitment but is very easy to put together once you learn all of the steps. If you prefer, you can omit the raisins or use a different dried fruit of your choice.

Raisin Crumble Topping

We will first start off by making the crumble topping in a mixing bowl, add in the melted butter (let it sit for 1-2 minutes to cool down), stir in the sugar and brown sugar until well combined. Add flour in slowly then throw in the cinnamon, set aside for later use.

  • all-purpose flour
  • granulated sugar
  • baking powder
  • soda
  • salt
  • unsalted butter, softened
  • eggs
  • vanilla extract
  • buttermilk
  • International Delight Pure Caramel Coffee Creamer

A super simple straight forward coffee cake batter mix recipe, this layer calls for a special coffee creamer. If you do not have the coffee creamer on hand, you can substitute it for milk instead.

Coffee Cake Layer

In a large mixing bowl combine the milk, butter, eggs and vanilla. In a separate bowl mix together the flour, baking soda and sugar, and then slowly add it to the other ingredients 1 scoop at a time. Mix together (do not over mix!).

In a pre-greased 9x9 Baking pan pour half of the batter into the pan and then cook it as directed on the recipe card. While this first half is baking we will move on to make the cinnamon swirl filling.

Cinnamon Swirl Layer Ingredients

  • unsalted butter, melted
  • light brown sugar
  • granulated sugar
  • all-purpose flour
  • ground cinnamon

We have made it to the cinnamon swirl layer yay! This layer is so much fun to make and literally only takes a few minutes to whip together. See all of the photos below on what you want each step to look like while you are baking this easy coffee cake recipe.

Cinnamon Swirl Filling

While that first layer of the coffee cake is cooking, grab a medium mixing bowl blend together flour, cinnamon, sugar, and brown sugar. Slowly adding the melted butter until it is well blended.

Once the first half of the cake has been cooking for about 15 minutes, it's time to pull it out of the oven and then top it with the Cinnamon Swirl filling. Next, you will add a layer of salted caramel or whatever caramel you have on hand. Now we will move to the final step of making this delicious cinnamon coffee cake.

Bake the Cinnamon Coffee Cake

The final step of making this cake is adding the remaining batter and then adding that beautiful raisin crumb topping we made earlier. To wrap this up we will pour the other half of the cake mixture on top of the cinnamon swirl layer we just made.

After that we will top the cake with the crumb mixture we made earlier and then put it back in the oven for the recommended time on the recipe card. Remove from the oven and then let sit to completely cool. Once cooled top with salted caramel sauce, serve warm or at room temperature with your favorite cup of coffee.

An easy Cinnamon Coffee Cake with Salted Caramel recipe that goes great with your morning cup of coffee. This decadent cinnamon coffee cake has a layer of cinnamon swirl, salted caramel, and is topped with a raisin crumb topping.

Ingredients

Coffee Cake

  • 2 1/2 cup all purpose flour
  • 1 cup granulated sugar
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp kosher salt
  • 3/4 cup unsalted butter, softened
  • 3 eggs
  • 2 tsp vanilla extract
  • 2/3 cup buttermilk
  • 2 Tablespoons of International Delight Pure Caramel Coffee Creamer

Crumb Topping

  • 1 cup light brown sugar
  • 1/3 cup granulated sugar
  • 2 tsp ground cinnamon
  • 1/4 tsp kosher salt
  • 1 cup unsalted butter, melted
  • 3 1/2 cups of all purpose flour
  • 1 Cup of Raisins.

Cinnamon Swirl Filling

  • 1 1/4 cups unsalted butter, melted
  • 1/2 cup light brown sugar
  • 1/2 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon ground cinnamon

Salted Caramel

  • 1 cup granulated sugar
  • 6 Tablespoons salted butter, cut up into 6 pieces
  • 2 Tablespoons of International Delight Pure Caramel Coffee Creamer
  • 1/2 cup heavy cream
  • 1 teaspoon salt

Instructions

Salted Caramel

  1. To make the Salted Caramel Sauce, start by heating up the sugar in a medium sauce pan over medium heat. The sugar will form into clumps and then melt into a thick brown colored liquid. Once the sugar has melted very slowly add in the butter, let bubble for about 2-3 minutes.
  2. Then add in the heavy cream and International Delight Pure Caramel Coffee Creamer by drizzling it over the sugar. Stir until mixture is combined and then let cook and bubble over the heat for about 1minute.
  3. Be careful for backsplash while pouring in the liquids into the melted sugar as it is possible it can splash back at you while it bubbles.Remove from heat and then toss in the salt, set aside to let it cool down

Coffee Cake

  1. For the crumble cake start off by making the crumble topping first in a mixing bowl, add in the melted butter (let it sit for 1-2 minutes to cool down), stir in the sugar and brown sugar until well combined. Add flour in slowly then throw in the cinnamon, set aside for later use.
  2. In a large mixing bowl combine the milk, butter, eggs and vanilla. In a separate bowl mix together the flour, baking soda and sugar, and then slowly add it to the other ingredients 1 scoop at a time. Mix together (do not over mix!). Toss in the raisins then hand stir them in with a spatula.
  3. In a pre-greased 9x9 Baking pan (you can use a cooking spray. Pour half of the batter into the pan and then cook at 350 degrees for 15 minutes.
  4. While that is cooking, in a medium mixing bowl blend together flour, cinnamon, sugar and brown sugar, slowly adding the melted butter until well blended.
  5. Once the half of the cake has been cooked for 15 minutes, pull it out of the oven and then top it with the Cinnamon Swirl filling and then a layer of the salted caramel. Pour the other half of the cake mixture on top.
  6. Top the cake with the crumb mixture we made earlier and then put it back in the oven for 50-60 Minutes. Remove from the oven and then let sit to completely cool.
  7. Once cooled top with salted caramel sauce, serve warm or at room temperature with your favorite cup of coffee and a splash of the International Delight Pure Caramel Coffee Creamer.
