This one-pot meal is made with just a few simple ingredients that you can find at your local grocery store. Feel free to sub out the chicken stock for vegetable stock, beef stock, or whatever you have on hand.

  • Chicken Stock
  • Cream cheese
  • Mozzarella cheese
  • Parmesan Cheese
  • Salt and pepper to taste

How To Cook One-Pot Broccoli Gnocchi

To start, preheat your oven to 350 degrees. Then add the broccoli, gnocchi, and stock to an oven-proof cooking pan, ideally a cast iron, or Dutch oven. Bring the stock to a boil it over medium heat. Cover with a lid and bring to a simmer, cook for 3 minutes or until the gnocchi is almost done and the broccoli is a vibrant green.

Now add the cream cheese and half the mozzarella cheese and stir to incorporate. Remove from heat and top with the remaining mozzarella cheese. Take to the oven and bake for 10 minutes or until bubbly on top. Season to taste by adding salt and pepper, or red pepper flakes. Serve straight from the oven! Enjoy!

Do I Need Fresh Gnocchi?

To cook this specific recipe you will need fresh gnocchi. Fresh store-bought gnocchi is typically found in the refrigerator section of the deli, or fresh packaged food section. If you do not have any on hand no worries! This recipe still works great with packaged shelf-stable gnocchi.

Simply revive them by bringing a large pot to boil, add salt to the water. Add the prepackaged gnocchi to the water and then cook until they are el dente. Once they are el dente continue on by the directions listed on the recipe card.

Buying and Storing Gnocchi

While everyone, including me, wishes they could make fresh gnocchi at the drop of a hat. The reality is when you have a busy schedule, buying store-made or packaged gnocchi is a huge time saver. Is fresh gnocchi better, of course! But you don’t need it to make truly delicious meals.

Store the gnocchi in either your fridge or pantry according to the products directions, at moderate room temperature in its original vacuum sealed container. I typically use the gnocchi within 3 days of purchasing, I highly recommend using the entire package once it’s opened.
