Banana Butterscotch Muffins

Banana Butterscotch Muffins

There’s nothing like saying ” Good Morning” with a fresh baked muffin. You would be surprised at how many this recipe makes, and how many smiles you can create. If you are like me and get uneccassarily excited to find butterscotch baking chips in the store, then you will be super excited to try this recipe out. For some reason, the banana goes perfectly with butterscotch!

Mini Banana Butterscotch Muffins

To add some pizazz to these muffins, I topped them off with butterscotch crumble topping. Yep, you read that right, there are butterscotch baking chips inside of the muffin, as well as all over the tops of them.

I won’t lie to you, my mouth is watering as I describe this muffin to you again, and the pictures don’t help with my need to feed my greed. Yeah, I tried to rhyme sorry, I pretty much failed at that, I’ll just stick to blogging and cooking.

I highly recommend that you serve these babies fresh out of the oven, or straight from the microwave. If you heat them in the microwave you can try them for 20 seconds.

For my microwave that makes the butterscotch melt and made the muffin oh so deliciously warm and mouth-watering well. Ok now that yall know the rundown on this recipe I’ma go enjoy the rest of my muffins.

Banana Butterscotch Muffins Ingredients

  • brown sugar
  • unsalted Butter softened
  • ripe bananas, mashed
  • egg
  • vanilla extract
  • all-purpose flour
  • baking soda
  • ground cinnamon
  • salt
  • butterscotch chips

Put those neglected banana’s to good use with this delicious Banana Butterscotch Muffin recipe. It’s your basic muffin recipe with a bump of banana flavor that goes perfectly with the butterscotch.

Banana Butterscotch Muffins

Preheat your oven to 350°F. Place paper baking cups into 12 muffin pan cups and set aside. In a medium mixing bowl combine the brown sugar and butter in a bowl. Beat at medium speed with a hand mixer or in a stand mixer, until creamy. Now add in the bananas, egg, and vanilla. Continue beating until the muffin batter is well mixed.

Place the flour, baking soda, cinnamon, and salt into another small mixing bowl. Slowly stir the flour mixture into banana mixture just until moistened. Spoon batter evenly into prepared muffin cups.

Streusel Topping

  • all-purpose flour
  • brown sugar
  • Unsalted Butter (softened*)
  • butterscotch chips

Combine all streusel ingredients except butterscotch chips in a bowl; mix well. Stir in butterscotch chips with a spoon. Spoon evenly over top of muffins. Bake as directed on the recipe card or until light golden brown. Once they are finished cooking, let them stand for about 5 minutes in the muffin pans before removing the muffins from the pan to the cooling rack.

Banana Butterscotch Muffins

  • 1/3 cup firmly packed brown sugar
  • 1/4 cup of Unsalted Butter, softened*
  • 2 medium, 1 cup ripe bananas, mashed
  • 1 Egg
  • 1/2 teaspoon vanilla
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1 Cup of Butterscotch Chips

Streusel

  • 1/2 cup all-purpose flour
  • 1/2 cup firmly packed brown sugar
  • 1/4 cup of Unsalted Butter, softened*
  • 1/2 cup butterscotch chips

Instructions

  1. Heat oven to 350°F. Place paper baking cups into 12 muffin pan cups; set aside.
  2. Combine 1/3 cup brown sugar and 1/4 cup butter in bowl. Beat at medium speed, until creamy. Add bananas, egg and vanilla; continue beating until well mixed.
  3. Place 1 cup flour, baking soda, cinnamon and salt into another bowl. Stir flour mixture into banana mixture just until moistened. Spoon batter evenly into prepared muffin cups.
  4. Combine all streusel ingredients except butterscotch chips in bowl; mix well. Stir in butterscotch chips with sppon. Spoon evenly over top of muffins.
  5. Bake 18-25 minutes or until light golden brown. Let stand 5 minutes; remove muffins from pan to cooling rack.
